Homemade Granola


Back in June, while Dustin and I had friends from Colorado visiting, I decided I would make homemade granola for breakfast so that we could have a build-your-own parfait type of meal. I loved how it turned out and I am sure you will too! It's pretty simple and is great to make ahead of time so that there is not fuss in the kitchen and you can just spend that extra time with your friends!


To start, you will need: 2 cups regular rolled oats, 1 cup coarsely chopped nuts, 1/4 cup wheat germ, 1/2 cup coconut (optional), 1/2 cup honey (or maple-flavored syrup), 1 cup dried fruit, 2 Tablespoons oil. Optional: 1/4 cup flax seeds, 1/2 cup shelled sunflower seeds.

Grease a one inch deep pan and set aside. Next, combine your dry ingredients in a bowl, mix and set to the side. In a smaller bowl, mix honey and oil. Mix the honey/oil mixture into the oat mixture. Spread the mixture evenly in the prepared pan and bake for 30-35 minutes at 300F. Stir the mixture at about 20 minutes for even browning. Cool and stir in dried fruit. The nice thing about granola is that it keeps for a whole week in an air tight container or for 2 months in the freezer.


Parfaits are simple to make. Layer with fresh fruit and yogurt and you've got yourself a delicious and healthy breakfast or snack! I hope you enjoy! ♥, mK
